The T-Bone steaks and artichokes are so simple! Marinade the steaks with olive oil, brown sugar, salt, and pepper. Throw them on the grill. I take mine to 130 degrees, then cover them with foil and let them rest for 10 mins. Perfect medium rare! For the artichokes I can’t lie…. it’s cheating. I just got an InstaPot as a housewarming gift. Now I know why people are raving over them. AMAZING food. Ready in minutes. I trimmed up the artichokes, cut them in half and soaked them in lemon water. Added 3 tbsp of oil, 4 garlic cloves diced, freshly chopped thyme, and salt to a cast iron skillet on high heat. I seared the artichokes until they had a nice brown to the edges. Then throw them in the InstaPot and pressure cook them for 10 minutes! With the right time management the steaks and artichokes are done at the exact same time. We have a CharGriller Smoker and we wait about 30 mins for it to get to temp. Then the steaks are on for about 8-10 mins each side. Sounds like a long time… but it depends on the temp of the grill and if it’s direct heat. Also, the thickness of the steak. These were 2 lb T-bones (just for reference).
The garlic aioli:
-1 cup of mayonnaise
-2 tbsp of lemon juice
-4 garlic cloves diced
-1 tsp fresh finely chopped thyme
-salt and pepper to taste
I blend mine up in a NutriBullet. It’s delicious! Some people add an egg yolk. I don’t enjoy my aioli like that. It’s up to you. 🙂
