Tonight I made my husband dinner for his birthday. He loves my sweet potato mash! It took awhile to perfect it. Here is my newest recipe:
- 3 yams, cut in quarters and peeled (I leave a little skin on because he likes it. To each their own!).
- 2 tbsp of garlic, minced
- 2 tbsp of coconut sugar
- 3 tbsp of butter
- Salt to taste
- Bring water to a boil in a pot. I personally use a 12 quart pot. This is my preference, because it’s easier to handle, easier to drain the water, and you have more room to mash and stir.
- Boil the sweet potatoes until cooked through. I test mine with a fork to check tenderness. Usually about 30 mins.
- Add in your butter, garlic, coconut sugar, and salt. Stir well!
