Shrimp Po’ Boys

Sauce:

  • 1/2 cup mayonnaise
  • 1 tbsp Louisiana hot sauce
  • 1 tbsp yellow mustard
  • 1 tbsp relish
  • 1 minced clove of garlic
  • salt/pepper to taste

Slaw:

  • 1 bag of coke slaw veggie mix
  • 1 cup of diced pineapple
  • 1/2 cup almond milk (or buttermilk)
  • 1/2 cup of mayo
  • 1/4 cup cilantro
  • 1 1/2 tbsp lemon juice
  • 1 1/2 tbsp apple cider vinegar
  • salt/pepper to taste

Sandwich:

  • French rolls
  • Lettuce
  • Tomatoes, sliced
  • Onions, sliced
  • Avocado, sliced
  • Shrimp, peeled and tails removed (once thawed, add whatever seasoning you wish to use. I have used Old Bay and blackened seasonings before. Both were delicious!)
  • 2 tbsp of butter

Instructions:

  1. In a large bowl whisk all the sauce ingredients together and place in the fridge.
  2. In another large bowl, mix together all of the slaw ingredients together and place in the fridge.
  3. In a cast iron skillet on medium heat, add two tbsp of butter. Once melted, add in your shrimp. Cooked until pink (approximately three mins).
  4. Build your sandwich and enjoy!
